Celebrate the Dads in your life and give them a taste of summer and a touch of sweetness all at the same time.  This is the perfect dessert for any busy person, or maybe baking is just not your thing.  Even the bakers out there can kick it up and make this dessert from scratch.  Anyway you do it, Dad will be sure to appreciate the love!

 

Super Simple Strawberry Shortcake

What shows summer love better than fresh strawberries?  This post is dedicated to my Dad; someone I know holds a special place in his heart for Strawberry shortcake.  Here is the busy Mom’s rendition.

Ingredients:

Individual Sponge Cakes – store bought works great (we chose chocolate!)

Fresh Strawberries halved or quartered

Whip Cream – make your own (I like to add 1Tablespoon of white granulated sugar, and 1 teaspoon pure vanilla extract to the whipping cream), or save yourself some time and pick-up your favorite pre-made whip cream.

 

That’s all you need!  This recipe won’t break the bank either ;-)

Directions:

Generously top sponge cake with chopped strawberries.

Add a large dollop of whip cream.

 

It really doesn’t get any easier than that!  A popular thing to do for this dessert is to toss the strawberries in a little bit of sugar.  That will get their juices flowing.  I find the strawberries are so ripe and tasty right now, I save myself that little bit of sugar and just serve them plain.  Make Dad this special treat and it is sure to make him feel special, even though it only takes minutes to do!

Big Brother was all too happy to test out this dessert!  Hey, we needed a picture to go with the recipe, right?! ;-)  We tried it out last Sunday and while I put it together he covered his eyes the whole time, and specially requested I tell him “Happy Dessert Sunday Surprise!”

I love to see the world through his eyes!

Great recipe Wendy, easy to put together very quickly!

We have other great recipes on our page and if you are looking for another strawberry recipe you could make jam with QuickSet sugar. It's really easy and quick and also makes a great gift; just put it in a cute jar and tie a ribbon on!
