Here is a quick and easy recipe my whole family loves. We came up with this recipe in order to have a weeknight Chicken Parm dinner without a lot of work. It is a big hit with the kids. Sorry for the lack of pictures.
Easy Chicken Parm
Ingredients:
1 Whole Roasted Chicken
Jar of Tomato Sauce or 1 Large Can or 2 Small Cans
Mozzarella Cheese
Parmesan Cheese
*Optional Seasoning - such as parsley, oregano, or pizza blend
Directions:
Preheat oven to 350 degrees F
Remove all of the meat from the Roasted Chicken, pulling it apart or cutting it into smaller pieces. You can find these pre-cooked chickens at most grocery stores and even Costco. We like them because the chicken is super moist, even when you reheat it. Most of the time I buy the Roasted Chicken the day before, and by making it into chicken parm it is also a great way to reheat the chicken.
Pour a little bit of tomato sauce in the bottom of the pan to prevent the chicken and cheese from sticking. Just enough to lightly cover the bottom. I used our 9x13 inch glass baking dish.
Add chicken to the dish. Pour remaining tomato sauce over the chicken (*note you may want to reserve a little bit of sauce if serving with a side of pasta. Adding a little bit of sauce to cooked pasta is a great way to prevent it from sticking to itself without adding additional fats such as butter or oil).
Top with shredded mozzarella cheese. Sprinkle with parmesan cheese. You can add as much or as little cheese to your liking. If you are trying to cut back on your consumption try using a part skim cheese and/or adding just a light sprinkling of cheese for flavor.
Optional: sprinkle with seasonings for extra flavor such as parsley, oregano, or my personal favorite a pizza seasoning blend.
Cook until cheese is completely melted, and slightly browned around the edges. To be safe you want to make sure the chicken is heated to 165 degrees F.
Our favorite way to serve this easy rendition of chicken parm is with a side of whole wheat spaghetti or penne, and steamed broccoli.
