OK, so the biggest thing going on around here this past week is snow! We got several inches of fluffy white, glittering snow. I took this photo out my bedroom window while I was toasty warm and all cozy inside.
Here you can see the progression from a light snowfall with a pretty dusting on the pumpkins, to a big snow dump! Honestly, it feels like Christmas around here and the Halloween decorations are looking a little out of place at the moment. The pine trees look gorgeous with a blanket of white, and the pumpkins now look like snowmen. I overheard a woman in the store say to her children: "Let's make Rudolf the Red Nose Pumpkin this year!" It's actually brilliant because the pumpkins are frozen, and I've never tried carving a frozen pumpkin before.
Even though Halloween is just a few days away, I bought some Christmas wrapping paper and labels. I figure I might as well do it when I'm feeling inspired and motivated, and I was able to watch a Christmas movie on Hallmark Channel as the snow was falling, hehe. See, I know myself really well, and if I don't do something when I'm feeling inspired to do it I'll have a hard time motivating myself later on. I've learned to ride the energy wavelengths over the years when they come.
This week I also made a jar of my favorite homemade salad dressing. It's great if you want a healthy alternative that still tastes really yummy and satisfying on greens. It has no dairy or oil, but trust me you won't miss it because it's full of flavor from lemon and garlic, and cashews lend a really nice creaminess. Check out the recipe link below the picture.
