From what I gather most people fall into 2 categories, those who love leftovers and those who hate them. In our house we love leftovers. I should clarify, we love recent leftovers, not the ones that have been hanging around in the fridge for way too long while you are each wondering who is going to get to throwing them out.
There are a couple of reasons I love leftovers. One being I find it a HUGE time saver, especially with kids. For dinner a lot of the time I purposely try to make extra food to feed the kids lunch, and us if there is enough. That way your lunch for the kids is just heat and serve. And a lot of the time you don’t even have to heat the food because the kids like it cold.
When planning and making dinners I try to make them nutritionally balanced as often as possible. Having leftovers also usually means a pretty balanced lunch the next day. If it is a really big meal sometimes I will save the leftovers for a second dinner.
Eating leftovers I believe also saves us money. I find things tend to cost less per portion when you are making a larger amount. Wanting to save some food for the next day can help you with portion control as well. I am not sure how much longer this will work for our family with our kids growing and getting larger appetites, but I plan to keep doing it as much as possible.
Leftover veggies, often steamed, make a great snack cut up for my baby. It is so quick and easy when the cooked veggies are just waiting in the fridge to be eaten.
For my own personal lunch I love to put leftover dinner on top of a bed of lettuce for lunch. You would be surprised how many things taste great the next day on top of a salad. This way I get leafy greens in my diet, which help fill me up and boost the number of veggies I am eating, all the while allowing me to put a smaller portion of other foods on top.
Today for example we had left over perogies and green beans, so I made a salad of greens, whole raw almonds, with perogies and green beans on top. It was great!
I’ll admit sometimes it can be hard to eat the same thing twice in a couple of days but next time you are faced with leftovers consider saving them. Some leftover foods such as soup are even great for freezing for another week’s dinner. It can also be a great healthy option with little to no planning. A healthy dinner means a healthy leftover lunch the next day!
Not every night, but the majority of nights I do the cooking so my husband cleans up for me. It is a great time for him to take some of the left over dinner and put it into containers for his lunch at work. He adds a couple of snacks and his food for the next day is all ready making an easier morning routine. It also helps to spend less on eating out, and most of the time is a healthier option.
Just think eating leftovers wastes less, saves money, and is very convenient!
