Hubby was hard at work today cooking for us.
Today he made a slow cooker recipe, inspired by the Mom’s Old Fashioned Beef Stew recipe in our 300 Slow Cooker Favorites by Donna-Marie Pye cook book. It was a cold day today so this meal really hit the spot.

The dinner included beef that was tossed in flour, salt, and pepper, than browned in a skillet. After putting the beef in the crock pot we also included vegetable stock (instead of beef stock because that is what we had in our pantry), carrots, celery, onion, diced tomatoes, peas, and sweet potatoes (instead of regular potatoes) plus some seasonings. I highly recommend replacing potatoes with sweet potatoes in recipes. The flavor of the sweet potatoes is great in stews. In recipes we usually cut back on the amount of meat the recipe calls for, and increase the vegetables. Hubby did this with tonights dinner as well.
It took about 6 hours to cook in the slow cooker on high. It was well worth the wait, and the added bonus is the house smelled wonderful. We went out to the mall and came home to a dinner that was waiting for us.
Hubby served the stew with whole wheat bread for dunking. Delicious!

As if that wasn’t enough. While I was reading the kids some stories before bed Hubs secretly baked from scratch a batch of chocolate chip cookies. REAL chocolate chip cookies, not like the kind I tried making! He used Hershey’s Classic Chocolate Chip Cookie recipe.
We are all starting to feel a little under the weather around here so these cookies I am sure will hit the spot. I’m off to have my water, then a fresh baked cookie; with milk too I am sure.
