Vegan Cheesy Popcorn
Ingredients:
¾ cup popcorn kernels
⅓ cup coconut oil, melted
⅔ cup raw curry cashews or plain raw cashews
⅓ cup nutritional yeast
2 tsp. turmeric powder
2 tsp. sea salt
1 tsp. onion powder
Directions:
Pop the popcorn kernels using an air popper into a very large bowl according to manual instructions (you may have to pop ¼ cup kernels at a time depending on your machine). Alternatively you can pop popcorn on the stove-top in a large covered pan using part of the coconut oil, reserving the rest as a topping.
In a food processor add cashews, nutritional yeast, turmeric, salt and onion powder. Process until very finely ground.
Pour melted coconut oil over popcorn, mix.
Next, sprinkle the ground cheesy powder over the popcorn breaking up clumps with your fingertips. Stir, continuing to break up any clumps of cheese powder.
