One of our favorite things about being at home together is baking! My daughter wanted to share with you her favorite breakfast recipe - pumpkin waffles! We hope you enjoy them. The entire recipe can be found below the video.
Vegan Pumpkin Waffles
1 1/4 cup pumpkin
3 1/2 cups almond milk (or your preferred non-dairy milk)
1/2 cup oil (avocado oil, olive oil, & vegetable oil all work)
2 Tbsp cane sugar (or honey for non-vegan)
3 tsp. pumpkin pie spice blend
1 tsp. salt
2 Tbsp. baking powder
4 cups flour (for gluten-free use a gluten-free flour blend)
To a large mixing bowl add pumpkin, non-dairy milk, oil, and sugar. Whisk to combine. Next add the pumpkin pie spice blend, salt, and baking powder; whisk. Lastly, add the flour 2 cups at a time whisking all ingredients together. Follow the manufactures instructions on your waffle iron for cooking the waffle batter. Enjoy!
