Both Chilli and Chicken Pot Pie make wonderful wintertime meals. They are hearty warm dishes, and also can easily feed a crowd which is why I chose them for entertaining. In addition, they can be prepared in advance which is a big plus. Next time you have plans to spend the day in the cold outdoors skiing, sledding, or just playing in the snow, consider making one of these dishes in advance to come home to. They will warm you up, fill you up, and be waiting for you after a long day when you are tired.
I was first inspired to make this favorite dish of Big Brother’s when I came across the recipe Easy Chicken Pot Pie on Cooks.com. This recipe is super simple.
Easy Chicken Pot Pie – Cooks.com
Ingredients:
Package of 2 pre-made pie crusts
Dried minced onion
1 lb frozen mixed vegetables (diced works well for even cooking)
4 Tbsp water (for steaming veggies)
1 can cream of chicken soup
Cooked Rotisserie Chicken
Directions:
Cook one pie crust according to package instructions.
Shred or dice cooked chicken removing skin and bones, set aside.
Toss salt, pepper, and a handful of dried minced onion with the frozen vegetables in a large bowl. Cook the vegetable mixture either on the stovetop following the instructions on the bag, or add 4 Tbsp of water and microwave until soft following package instructions.
Once tender add chicken to the vegetable mixture, and stir in a can of cream of chicken soup.
Pour the filling into the prepared pie crust, and place the uncooked pie crust on top.
Cook the pie at 420 degrees F for 15 minutes.
Reduce heat to 375 degrees F and cook for about 30 minutes longer, it should be slightly golden brown.
· If you have a favorite pastry recipe of your own try using that instead.
· Instead of pastry you could also try using healthier dough or biscuits.
· You can pick whichever frozen vegetable mixtures you like best.
· Cream of Chicken Soup has a light option as well.
· You don’t have to use a rotisserie chicken, substitute it by cooking your own favorite chicken.
· Have a lot of leftover turkey, or vegetables from the holidays? Use your leftovers by dicing and tossing them in the pie in replace of the frozen veggies or rotisserie chicken.
To make this ahead of time I chose to make the pie through the step of placing the uncooked pastry on top. When my guests arrived I simply put it in the oven and finished cooking it. You could also fully make the pie and re-heat it if that works better for you.
In honour of Valentine’s Day I cut out a heart shape in the top pastry before placing it on top.
