Nonna’s Homemade Granola Bars
Ingredients:
1 cup peanut butter
1 cup honey (for vegan try agave nectar or maple syrup - I did 1/2 cup honey + 1/2 cup maple syrup)
½ cup coconut
½ cup grated carrots
½ cup chocolate chips (for vegan use dairy-free chocolate chips)
½ cup cranberries or raisins
3 ½ cups old fashioned oats
Directions:
Preheat oven to 350 ⁰ F
In a saucepan melt peanut butter and honey over medium-low heat.
In a large mixing bowl combine coconut, grated carrots, chocolate chips, and cranberries, stir.
Pour the melted peanut butter-honey mixture into the mixing bowl and stir to combine.
Lastly, stir in the oats.
Pour into an ungreased 9x13inch pan, spreading evenly.
Bake for 20-25 minutes.
Allow to cool in the pan, then gently cut into squares or rectangles, and refrigerate. I sometimes like to wrap them individually before putting them in the fridge to help keep them from crumbling and hold their shape. You can also freeze them individually wrapped to preserve them longer.
*Try substituting the coconut, carrots, chocolate chips or cranberries for some of your favorite ingredients.

Back in 2010 (10 1/2 years ago!) I shared this recipe, my Step-Mom's homemade granola bars recipe, that I absolutely love! My children call her Nonna because she is an amazing Italian-American grandmother. With a brand new year and school starting back up, I was thinking a lot about how much I cherish homemade foods and what things I wanted to make from scratch this week. Nonna's granola bars where the first thing that popped into my head. She texted me the ingredient list while I was in the grocery store so my daughter and I could bake them together. On a quick side note, my little girl turned 12 over the holidays!!!

The food industry has really made buying processed foods convenient and cheap, and when you buy those, there are no dishes to clean. I must admit, cleaning dishes isn't my favorite task, but the energy of processed food is simply not the same as homemade. Besides knowing exactly what ingredients are in your own homemade foods, there's no replacing the love and care that goes into making something yourself. And as much as I can I really want to continuously make space in my life for baking at home.
