Crazy About Barns

Green Bluff, WA

We've had another magical light dusting of snow this week in Eastern, Washington. This is one of my absolute favorite barns. My hearts melts, I could just stare at it for hours. I'm such a lover of barns! The brick silo, the fence made of upcycled wheels, and the ancient tractor are stunning together. It's gorgeous in the photo, but even more stunning in person. Green Bluff, Washington, for those of you who aren't local, is full of Christmas tree farms, pumpkin patches and apple orchards. There are cute shops stocked with great gifts and yummy pies, which is a beautiful reminder of how wonderful it is to support small, local businesses. High Country Orchard and Walter's Fruit Ranch are two of my personal favs in Green Bluff!

Covid-19 has put a strain on many small, local businesses and this holiday season is a good time to show them some much-needed love. In Spokane, WA our #1 visited restaurant is Gordy's Sichuan Cafe--so yummy, with choices for every type of diet, and just the right amount of spice! Our favorite locally owned coffee shop is (by far) Indaba Coffee. I personally love their beet latte with hemp milk, a skosh of raspberry syrup and a little bit of orange peel. If you're in need of crystals to stuff your stockings, my lovely friend owns the quaint shop Cosmic Aura Crystals. And I know the Hallmark brand it's exactly small, but how could I leave out our local Winnie's Hallmark store! There's always a million little reasons to love Hallmark during the holidays.

Oh how I've missed you! It seems I'm all about getting out in the world, diving deep into nature, breathing in the fresh mountain air, then stopping for boat loads of photo ops. All this and I get to do one of my very favorite things- share them with YOU! :) Summer's about to start. I'd love nothing more than to see you outside, frolicking in the sunshine, focusing on the beauty that surrounds you. Leprechauns, Guinness and Castles, Oh My! A trip to Dublin, Ireland.

Hello my dear friends,

How are you? This week I'm sharing with you another travel post chock-full of photos. Consider this a blogging side tour for a couple of weeks. I have all these photos from traveling that bring me so much joy, and they're a million times better when shared. I recently took a trip to 4 countries and I'm bursting at the seems to spread the love of travel to you.

One of the countries I visited was Ireland. It's been on my bucket list because I have Irish heritage. I absolutely adored Dublin, where we were staying. Words don't do it justice, and I'm hoping to go back again sometime. It's a great place to get a connecting flight from the United States to Europe. If you ever have the opportunity to travel there, or stop over, do it! It was cold when I visited, but completely worth it. I would, however, especially love to go back in the summer, summer, summertime :)

The cab drivers in Ireland are the best I've experienced in the world! The ones I met were so friendly and down to earth. They make you feel right at home in Dublin. In fact, I thought one guy was so great I wish I remembered his name to recommend him.

While we were at Trinity College we visited the Book of Kells- a gospel book in Latin thought to have originated around 800 AD.

The library full of priceless old books was kept in immaculate condition. The historic energy in the room was incredible. I think they dust these books a couple of times per day.

After visiting the college we headed over to Dublin castle. You won't find many colleges and Castles near one another in the States. Gotta love Ireland!

Always been a big fan of ceiling art, and chandeliers are pretty cool too.

What's missing from the room?

This room in the castle is thought to be haunted. Paintings will never stay up on the walls, and the room is always cold. They don't even bother trying to hang art in there anymore.

Moving on...

A trip to Dublin would not be complete without a visit to the Leprechaun museum!

We had a good time in the museum. There wasn't a lot to actually see in the Leprechaun museum but the stories were fantastic.

Okay, it's time to talk about something really important. Food!

Probably the coolest fresh squeezed orange juice maker I've ever seen. Real oranges in a convenient store? Wake up America! We need more real food in our stores.

This was my favorite restaurant in Dublin! In fact, even though we were only there a few days I visited it a couple of times.

Lessons from Morocco

There is beauty everywhere. Where you place your attention makes all the difference. Embrace the contrasts in life while on this crazy journey of the soul- the color, the drab, the clean, the dirty, the joy, the sadness. Experience it all, the known and the unknown. Honestly, it’s all magic and mystery.

I’ve missed a few weeks of blog posting for good reason, I was busy living and traveling and I have many pictures I’m so excited to share with you! While I believe strongly in the power of consistency when it comes to the things that are important to you (like writing!), I also believe in knowing when to break that consistency and listen to your intuition to stop, breathe and take it all in.

Light blue, yellow, and white were the predominant colors I noticed in Tangier, with bright pops of bold color on the lights.

Last but not least...

Do you recognize this building from the James Bond movie Spectre? Tones of brown were painted on it in the movie to add a distressed look.

Travel Maui (Plus Bonus Video: How to Keep Lipstick Off Your Teeth)

Hi Friends!

Last week was spring break and our family took some time off to enjoy the glorious sunshine on the beautiful island of Maui. It was our (kids and I) first trip to Hawaii, and now I can say after having visited, I could definitely live there for at least a couple of months per year. It’s so lush and magical with a very high vibe. I can absolutely understand why a lot people, and a few of my favorite spiritual teachers, love to spend time there.

Here are a few pictures from our trip. I hope you can feel the peaceful sunny vibe wherever you are enjoying the view from.

Portland, Oregon: Departure Restaurant & Blue Star Donuts

Portland is amazing! The locals refer to it as the vegan food capital and I can certainly see why. Everywhere I turn there is delectable vegan fair. There are even fast food chains that offer 100% plant based menus, like the Veggie Grill. In Portland, you can find bakeries that are 100% vegan and 100% gluten-free. Besides the great selection of completely vegan restaurants, many of the other restaurants in Portland offer vegan friendly menus and dishes. I feel like I’ve died and gone to food heaven.

During my stay in Portland I have had so many good eats, but I’ve narrowed it down to share with you a couple of my top favorites of the trip…

Departure Restaurant & Lounge

A fun modern Asian restaurant and lounge, with an unbeatable view on the 15th floor, downtown above Macy’s. What a special place! Not only is the atmosphere astonishing, the food is incredible. Besides their regular menu, Departure offers a vegan menu and a gluten-free menu. All you have to do is ask your server and the dishes will blow you away.

Creamy Pumpkin Spinach Soup Recipe and How to Make a Pumpkin Bowl

May I just take a moment to tell you how much I enjoy sharing anything pumpkin related with you! I wish you could take this time of year and bottle it up for a rainy day. Pumpkins, colorful leaves, the smell of crab apples in our front yard, and the crisp evening air all make me so happy. Now is my favorite time of year to go for a walk and enjoy every morsel this season has to offer.

There is so much to share with you today, from how to make your own pumpkin bowl to a healthy soup recipe that is sure to warm you heart and soul. At the very end I’m also going to share with you one of my favorite finds- a cute little coffee shop you need to know about!

Tonight we have an open house at my daughter’s preschool. It is also my son’s first violin lesson ever. He is extremely excited. Playing the violin is something he has been asking to do all on his own for a while now. As it turns out, it is a bit of a family tradition, which we didn't know until we mentioned signing him up. My son’s great grandfather and great great grandfather both played the violin, so maybe it’s in his blood.

We picked up a rental violin a few days ago, and it has been so hard for him to keep his hands off of it. We decided to follow the recommendation not to touch it until the first lesson when you learn how to take care of it. I am slightly terrified inside my son is going to have a lot of trouble being gentle with the violin.

I also can’t help but wonder how it will all go down. Will I have to make my son practice or will he actually want to do it? We’ll see. The good news is I’m great at repeating myself so if he needs some encouragement from Mom I’ve got that covered. For now, I’ll picture my son playing me beautiful music in my head. That should get me through, right? Secretly, I’m excited and I really do hope he loves it, but I’ve learned enough as a parent now to take everything one step at a time.

How to Make a Pumpkin Bowl

Ingredients:
Sugar pumpkin, around 2.5 lbs. in size
½ tsp. sugar
½ tsp. sea salt

Directions:

Preheat oven to 400 degrees F.

Line a baking sheet with a silpat or aluminum foil to prevent sticking.

Clean and dry the pumpkin. Using a paring knife cut the top off the pumpkin.

Scoop out all of the seeds and stringy bits.

*Tip – you can save the pumpkin seeds for roasting, or you can do what I did… toss the seeds in a place you hope pumpkins will grow next year and keep your fingers crossed (not guaranteed to work).

Sprinkle the inside of the pumpkin, and underside of the pumpkin top with sea salt and sugar.

Place the pumpkin on the baking sheet, and cook for approximately 25 – 35 minutes depending on the size of your pumpkin.

Pat yourself on the back because you just made a beautiful pumpkin bowl!

Creamy Pumpkin Spinach Soup

“Hearty and delicious. Love the texture of the spinach…spicy for sure (if you add extra habanero - WI).”
~ Hubby

Yields: 6 servings

Ingredients:
3 Tbsp. extra virgin olive oil
1 medium onion, diced
4 cloves garlic, minced
¼ of a habanero pepper, diced (optional for added heat)
10 oz. (284 g) spinach, fresh
½ tsp. nutmeg, ground
½ tsp. white pepper
1 tsp. sea salt + 1 tsp. optional for extra seasoning at the end
1 quart (32oz.) Low Sodium Vegetable Broth
1 – 15oz. (425g) can pumpkin puree
1 can cannellini beans, rinsed & drained
½ cup cashews, raw
1 cup water

Directions:

In a large soup pot, add olive oil over medium-high heat.

Sauté diced onion for 3 minutes.

Add minced garlic and habanero pepper (optional), and continue to sauté for 2 more minutes.

This will make your house smell amazing!

Add fresh spinach a couple of handfuls at a time and sauté until all of the greens are wilted. It should take only a few minutes.

Season with nutmeg, white pepper, and 1 tsp. sea salt, stir for 1 minute.

Add vegetable broth, pumpkin puree, and beans, stir to incorporate. Turn up heat to bring to a boil.

Meanwhile, in a high powered blender, combine cashews and 1 cup of water. Blend until creamy about 1 minute.

Add cashew cream to the soup, and stir.

When the soup begins to boil, cover and turn down heat to a simmer for 10 minutes, stirring occasionally.

Check soup for additional seasoning, and add 1 tsp. sea salt if needed.

If your travels ever take you to Park City, UT you've got to check out this cute little drive through coffee shop called Silver King Coffee. They sell VEGAN DONUTS!

Silver King Coffee gets their donuts delivered from City Cakes in Salt Lake City, UT. I've heard they also carry vegan scones and muffins too. My husband, kids and I all had a cinnamon sugar donut. It was so light, fluffy, and delicious. I absolutely loved it!

Hi Friends!

We’re back from Chicago. It was so much fun! My husband and I spent last week in the city while the Grandparents watched the kids (THANK YOU SO MUCH!!!).

Chicago

The food was spectacular! I highly recommend a trip to Chicago if you’re into great restaurants.

As soon as we arrived we checked into our room and were off to a cocktail party.

The first night we dined at Frontera Grill, a Rick Bayless restaurant. This was my top favorite of the trip - a must visit! They had lots of vegetarian options that were easily made vegan by requesting no cheese.

The margaritas were also fabulous!

The restaurant had lots of fun, colorful Mexican artwork.

The next morning after all the delicious food and drinks we had I walked around the city with a giant coffee in hand.

During the trip we also visited 2 of Karyn’s vegan restaurants.

We grabbed a quick lunch at Kayrn’s Raw Cafe.

I ordered a curry made with coconut noodles and an apple-kale juice.

Another evening we went to Kayrn’s on Green with a really fun group of people.

I had vegan crab cakes and a side of Brussels sprouts, and my husband ordered the vegan Shepard’s pie.

We arrived home to Idaho to a winter wonderland. The snow is gently falling as I write. Now, I’m officially getting excited for the holidays!
